Peel carrots and then slice into rounds around 1/4" thick (consistency in size is important so that they cook evenly; I like to use a food processor or mandoline for this task)
Place cut carrots in a medium-sized pot and shake to create an even layer
Pour orange juice into pot; you'll know you've added enough when the carrots are completely covered.
Bring the orange juice to a boil, stir, then reduce heat to a high simmer and cover.
Let simmer until carrots are fork tender (around 1.5 to 2 hours usually). Once tender, drain the orange juice from the pot.
Return pot to the stovetop and add in the Zesty Orange Ginger sauce; you want to add enough so that the carrots can have a light coating on them with a little extra.
Bring the sauce to a low boil and let the sauce reduce down to a glaze, stirring occasionally.
Once you have it at a consistency you like, remove and serve!
