The basic recipe is super simple - literally three ingredients. At the same time it's loaded with flavor because my Piquant Peanut sauce... one of the three ingredients... contains14 ingredients all by itself! I'm also including suggestions for toppings if desired, but many find that just the three ingredients is satisfying enough.
Small dice the chicken and place in a bowl. Mix in the sauce and stir thoroughly to incorporate.
Spoon the chicken mix into a shallow dish (my preference is stoneware) and spread out in a single layer. Doing a single layer will help the chicken cook evenly and also allow the steam to evaporate vs. pool and water down the sauce.
Place in the oven and check the temperature of the chicken after 15-20 minutes; it will cook faster than usual because of the bite-sized pieces. Once the chicken reaches 160º, remove and let rest at least 5 minutes.
Spoon the chicken mixture into the lettuce leaves; add additional toppings and lime juice if desired.
Fold in the edges of the leaves to hold in the filling; bite and enjoy!
